Salary: $130,000–$150,000

We are building the next chapter of one of New York City’s most respected omakase restaurants, and we are looking for the right Edomae Sushi Chef to join the team.

This is a rare opportunity for a serious sushi chef to step into a restaurant with years of MICHELIN recognition, strong leadership, and a growing hospitality group behind it. We are looking for someone with real Edomae experience, discipline, passion, humility, and the desire to be part of something with momentum.

This is not just another sushi position. The right chef will help shape the next phase of a respected New York omakase experience.

• Minimum 3–5 years of Edomae sushi experience
• Experience in omakase or high-end Japanese dining
• Strong fish butchery and knife skills
• Knowledge of Edomae techniques, including aging, curing, marinating, and rice preparation
• High standards for cleanliness, organization, and consistency
• Calm, focused, professional, and team-oriented
• Strong passion for sushi, hospitality, and continuous improvement
• Japanese language skills are a plus

• Execute omakase service with precision and consistency
• Prepare fish, rice, and all ingredients to exacting standards
• Maintain a clean, organized, and disciplined workstation
• Follow proper product handling, storage, and rotation
• Work closely with the chef and culinary team
• Represent the restaurant professionally in a guest-facing counter environment

• Highly compensated salary position: $130,000–$150,000
